Savouring Siddu: Himachal's Iconic Walnut-Stuffed Delight from Manali

Nestled in the scenic beauty of Himachal Pradesh, Manali is renowned for its breathtaking landscapes and unique culinary delights. Among the many dishes that define the rich heritage of this region, Siddu holds a special place in the hearts of locals and visitors alike.

During our recent visit to Sethan, a quaint hamlet near Manali, we had the pleasure of indulging in this traditional delicacy at a charming spot called Kalzang Dhaba. This place was suggested by our Sethan stay owner, Babluji, whose recommendation proved to be a gem

Siddu is a steamed bread made from wheat flour and stuffed with a walnut-based filling. The preparation requires patience and skill, as the dough is allowed to ferment naturally, enhancing its flavor and texture. Once the dough is ready, it is stuffed and steamed to perfection, resulting in a soft, fluffy exterior and a savory, flavorful filling that melts in your mouth.

What made our experience truly special was the opportunity to meet Janak, a young boy assisting the owner of Kalzang Dhaba. With enthusiasm and dexterity beyond his years, Janak helped prepare the Siddu, giving us a glimpse into the traditional techniques passed down through generations. Watching him work alongside the dhaba’s owner was a heartwarming sight, reflecting the deep-rooted connection between food and culture in Himachal Pradesh. Don't worry it was his day off from school. We were indeed lucky to have him around.

As we bit into the freshly prepared Siddu, we were greeted with a burst of flavors that perfectly captured the essence of the region. Paired with homemade desi ghee and a side of special chutney made from locally sourced ingredients, the dish was a culinary revelation.


We spent over an hour at the dhaba, speaking with Janak and learning how to make their special chutney. The family’s warmth and hospitality made the experience even more memorable. The owner even let us try our hand at making momos, turning the visit into a delightful and interactive culinary adventure.
